The peppers can be chopped or left whole, depending on preference. The olive oil not only preserves the peppers, extending their shelf life, but also absorbs their heat, making it a spicy addition to various dishes. Typically, these preserved chilies are used in pastas, pizzas, sandwiches, and marinades. They offer a balanced taste—spicy, slightly tangy, and rich—perfect for adding a kick to both Italian and Mediterranean recipes.

 

 

Ingredients: 

  • 90 chili peppers
  • Salt, 3 tablespoons
  • White vinegar (1 litre approximately)
  • Extra virgin olive oil
  • Small jars 

The chili peppers will be ready in 2 to 3 weeks 
You can leave them in the jars up to 12 months
