Preparation
Preheat the oven to 180°C (350°F).
Grate the apple and the carrots.
Separate the egg yolks from the egg whites.
Beat the egg whites until stiff peaks form and set aside.
Beat the egg yolks with the sugar until they double in volume and obtain a fluffy, whitish cream.
Add the oil, orange juice, yogurt, and zest, mix well.
Gradually add the sifted flour with the baking powder, mix, then add the grated apples and carrots.
Mix everything well and finally fold in the egg whites.
