Ingredients

4 large eggs1 cup granulated sugar1 cup all-purpose flour1 teaspoon baking powder1/8 teaspoon fine salt1 can of pineapple rings in syrup (20 oz can)1/4 cup pineapple syrup (from the can)1/4 cup vegetable oilCrystalized cherries (one for each pineapple ring)3 tablespoons cocoa powder

Preparation

  1. Set your oven to 350°F (180°C).
  2. In a mixing bowl, beat the eggs with the sugar until well combined and airy.
  3. Gradually add in the flour, oil, and salt, mixing well to achieve a light, fluffy batter full of bubbles.
  4. Add the pineapple syrup and mix again until smooth.
  5. Separate the batter into two equal portions.
  6. Add the cocoa powder to one portion, mixing until well combined.
  7. Grease a bundt or round cake pan generously with butter and dust it lightly with flour.
  8. Arrange the pineapple rings on the bottom of the pan to cover it completely, placing a cherry in the center of each ring.
  9. Pour the batters over the pineapple rings, alternating the plain and chocolate batters to create a marbled effect.
  10. Place the cake in the preheated oven and bake for about 35 minutes.
  11. Check for doneness by inserting a toothpick into the center (if it comes out clean, the cake is ready).
  12. Allow the cake to cool in the pan before turning it out onto a serving plate.
