Preparation
- Place the olive oil in a small saucepan. Add several pieces of orange peel and a piece of lemon peel (remove the white pith to avoid bitterness).
- Heat the oil over medium heat until the peels start to brown lightly. Remove from heat and allow the oil to cool. Once cooled, remove and discard the peels.
- In a large bowl, combine the eggs, orange zest, orange juice, baking powder, the infused olive oil, and mix well.
- Gradually add the flour, mixing until the dough is smooth and free of lumps.
- Knead lightly until the dough is elastic. Cover with a clean towel and let it rest for about 30 minutes.
- After resting, take small pieces of dough and shape them into rings. If the dough sticks to your hands, rub a little sunflower oil on your palms.
- Heat sunflower oil in a deep pan or skillet over medium heat. Fry the dough rings on both sides until golden brown.
- Remove and place on paper towels to drain excess oil.
- While still warm, roll the fried rings in sugar to coat them.
